Ingredients for 4 servings:

  • 300 grams of spaghetti
  • 200gm bacon/kaiser/smoked ham (cheeks)
  • 4 eggs (one whole egg, the rest of the yolk)
  • 100gm hard roman pecorino cheese
  • pepper to taste

How to prepare:

Step 1: Boil a large saucepan with 3 liters of water (for 100 grams of pasta you need 1 liter of water) and 3 teaspoons of salt (1 teaspoon of salt per liter of water). Salt plays a role in enhancing the flavor of the pasta.

Cut the bacon/kaiser into cubes and fry in a large, oil-free skillet over medium heat for 2-3 minutes. Turn off the heat, pull the pan aside and cover it with a lid.

Step 2: Mix the grated cheese with a whole egg and yolk 3.

Step 3: Add black pepper to the cheese and egg mixture and quickly mix with a fork.

Seventh step: When the pasta and bacon start to sizzle, turn off the heat and add the cheese mixture with the eggs. Mix well and add a little cheese if you think the sauce is too liquid or on the contrary, add 1-2 tablespoons of hot water as the spaghetti is boiled if the sauce is too thick.
