The quesadilla is an extremely tasty culinary dish, inspired by Mexican cuisine and which has undergone some modifications over time, but which remains among the special and unique dishes that you never get tired of. Three Special Quesadilla Recipes

Omelet Quesadilla

An ideal and delicious choice for breakfast, it can be easily prepared with ingredients from your kitchen. You need 4 eggs, 2 tortilla sheets/stick, grated cheese, chopped green onions, a teaspoon of butter, salt and pepper. Beat the eggs well, add the grated cheese, onion and spices then put them in the hot pan with a little butter. Leave it for about a minute, until it catches a scab at the base, then put some glue all over the surface. Leave the omelette covered in glue for a minute, then with a spatula turn it over onto a plate. Put the other glue on top, add it to the pan and leave it for a few seconds. Remove the quesadilla omelette, place it on a plate and cut it into triangles.

Chicken quesadilla

To fully enjoy a lunch with family, friends or as a couple, we have concocted a wonderful chicken quesadilla recipe. You need 8 tortilla sheets, 500g chicken breast, 300g cheese or mozzarella, 3 tomatoes, grated carrot, onion, lemon, salt, pepper, oregano and oil. Squeeze the lemon and put the juice in a small bowl, then add salt, pepper and oregano. Cut the chicken into strips then pour in the lemon juice mixture, cover and leave to cool for approx. 30 minutes. Finely chop the onion and brown it in a little hot oil, add the diced tomatoes, the carrots and simmer until you obtain a sauce. Add salt, pepper and oregano to taste and remove. The chicken is cut into small pieces and put, together with the marinade, in a pan with hot oil until it penetrates. Heat another large skillet, place a slice of tortilla cut diagonally, grease with tomato sauce and sprinkle with a layer of grated cheese. Once melted, add the chicken and another layer of cheese. Cover with another identical tortilla sheet and leave on low heat for 2-3 minutes. Carefully turn to the other side and leave for another 2-3 minutes.

Vegetable quesadilla

For dinner, a vegetarian quesadilla is ideal. You need chopped red bell pepper, ½ cup chopped zucchini, 1 chopped zucchini, half a chopped red onion, 3 sticks, grated cheese or cheddar cheese, mushrooms, 1 tbsp olive oil. Finely chop the vegetables and mix a little with olive oil, salt and pepper, then sauté them in a pan over medium heat for about 7 minutes, then remove them. In the same skillet, place the first stick on which is sprinkled the cheese or grated cheese and some of the vegetable mixture, only half of the stick. After pouring the layer of vegetables, add another row of cheese, then fold over. Pan fry on each side.
