500g fresh green beans
1 medium onion
2 large eggs
30 g racing parmesan
2 tablespoons oil
Beans are cleaned and boiled for about 10 minutes. It should be crispy after boiling. We cut the green beans into pieces of about 3-4 cm. Put the oil in a saucepan and add the finely chopped onion. Sauté for 1 minute or until translucent, then add the green beans and mix. Put the eggs in a bowl, add the parmesan, a pinch of salt and freshly ground pepper. Beat the eggs with a fork until smooth. Add the eggs to the pan with the green beans and mix quickly. After 1 minute, over medium heat, turn off the heat. This way the eggs will be creamy and not dry.
