Bacon Egg Muffins are quick and easy to make, perfect for weekend mornings. It cooks in just 20 minutes and you don’t need to spend a lot of time in the kitchen. The little ones will definitely love them.
Ingredients for egg muffins with bacon
- 6 slices of bacon
- 8 husband eggs
- 1 cup cherry tomatoes, halved
- 2 tablespoons finely chopped chives (or green onions)
How to make egg muffins with bacon
Preheat the oven to 175aC and grease a muffin pan with oil.
In a non-stick skillet, add the bacon slices and sauté until crispy. You don’t need to add fat as they will leave you alone. Then remove the bacon on disposable paper towels to absorb the excess fat. After cooling, cut the slices into small pieces.
In a bowl, add the eggs and mix well until frothy. Then add the bacon, tomatoes, chives and season to taste with salt and pepper.
Add the composition to the muffin tin, being careful not to fill more than 3/4 of the mold, because the egg will swell. Bake the muffins for 15 to 20 minutes or until well penetrated.
Tip: Incorporate any other tangy vegetables into this recipe: mushrooms, peppers, spinach, etc. You can also incorporate cheeses.
How to serve egg muffins with bacon
Serve bacon egg muffins with toast and a cup of milk.
