Scrambled eggs with vegetables

  • 3 large eggs lightly beaten
  • 20g kale
  • 10 g grated carrots
  • quarter of a red bell pepper, julienned or cubed, according to preference
  • ½ clove garlic very finely chopped
  • salt
  • pepper
  • 30 g grated mozzarella
  • quarter of a medium sized avocado, cubed

How is it prepared:

In a large nonstick skillet, add eggs, kale, carrots, peppers and garlic. Cook over low heat until the eggs are well cooked and the vegetables are easily softened. Season with salt and pepper to taste.

Serve the eggs with grated cheese and avocado cubes, accompanied by toast.
